NOTE: Definition of terms -- Material Levels: Level 1: This entry level Japanese stainless steel has good hardness, corrosion resistance and is able to keep a great edge. Level 2: This is a high carbon Japanese stainless steel with great corrosion resistance, good strength and the ability to obtain and keep an excellent edge. Level 3: A premium Japanese stainless steel with an excellent corrosion resistance. Molybdenum alloy is added to increase toughness and strength. After heat treatment, this metal is capable of attaining an awesome hardness and wear resistance. Edges: Convex edges are 40-45 degrees and found on most hollowground shears. Razor sharp and requires special sharpening methods. Bevel edges are more chisel like, 24-35 degrees, found usually on flatground shears. Semi convex edges are 35 degrees and found on hollowground shears. Requires special sharpening methods. Handles: Even handles have finger holes parallel to each other. Offset handles have one finger hole offset to the other, relieving carpel tunnel stress. Swivel handles have the thumb hole mounted as a ring that swivels to adjust to your hand. A great stress reliever for carpel tunnel syndrome. Double tang handles have a tang on each finger hole so that they can be used right or left handed. Bent Shank handles have the shanks bent to raise the hand above the work being done. |
